Ingredients

  • Pork ribs - 500 grams
  • Water - 1 liter
  • Ginger - 20 grams, sliced
  • Garlic - 3 cloves, smashed
  • Green onions - 2 stalks, chopped
  • Carrot - 1 medium, sliced
  • Daikon radish - 100 grams, sliced
  • Soy sauce - 30 ml
  • Salt - 5 grams
  • White pepper - 1 gram
  • Mushrooms (shiitake or button) - 100 grams, sliced
  • Sesame oil - 10 ml
  • Cilantro - a handful, for garnish

Steps

  1. In a large pot, add the pork ribs and cover with 1 liter of water. Bring to a boil over high heat.
  2. Once boiling, skim off any foam that forms on the surface. Then add ginger, garlic, and salt. Reduce heat to low and let it simmer for 60 minutes.
  3. After 60 minutes, add the carrots, daikon radish, soy sauce, white pepper, and mushrooms. Continue to simmer for another 20 minutes or until the vegetables are tender.
  4. Drizzle sesame oil into the soup and stir well. Taste and adjust seasoning if necessary.
  5. Serve hot, garnished with chopped green onions and cilantro.
