- Pork ribs - 500 grams
- Water - 1 liter
- Ginger - 20 grams, sliced
- Garlic - 3 cloves, smashed
- Green onions - 2 stalks, chopped
- Carrot - 1 medium, sliced
- Daikon radish - 100 grams, sliced
- Soy sauce - 30 ml
- Salt - 5 grams
- White pepper - 1 gram
- Mushrooms (shiitake or button) - 100 grams, sliced
- Sesame oil - 10 ml
- Cilantro - a handful, for garnish
Steps
- In a large pot, add the pork ribs and cover with 1 liter of water. Bring to a boil over high heat.
- Once boiling, skim off any foam that forms on the surface. Then add ginger, garlic, and salt. Reduce heat to low and let it simmer for 60 minutes.
- After 60 minutes, add the carrots, daikon radish, soy sauce, white pepper, and mushrooms. Continue to simmer for another 20 minutes or until the vegetables are tender.
- Drizzle sesame oil into the soup and stir well. Taste and adjust seasoning if necessary.
- Serve hot, garnished with chopped green onions and cilantro.
