- Pork tenderloin - 200 grams, thinly sliced
- Egg noodles - 200 grams, cooked according to package instructions
- Soy sauce - 3 tablespoons, low sodium
- Sesame oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, minced
- Carrot - 1 medium, julienned
- Bell pepper - 1 medium, sliced
- Green onions - 2, chopped
- Broccoli - 100 grams, cut into small florets
- Salt - to taste
- Black pepper - to taste
- Cooking oil - 2 tablespoons
Steps
- Heat 1 tablespoon of cooking oil in a large skillet or wok over medium-high heat.
- Add the sliced pork tenderloin to the skillet and season with salt and black pepper. Stir-fry for about 5-7 minutes until the pork is cooked through and browned. Remove from skillet and set aside.
- In the same skillet, add the remaining tablespoon of cooking oil. Add minced garlic and ginger, stir-frying for 30 seconds until fragrant.
- Add the julienned carrots, sliced bell pepper, and broccoli florets to the skillet. Stir-fry for 3-4 minutes until the vegetables are tender but still crisp.
- Return the cooked pork to the skillet and add the cooked egg noodles, soy sauce, and sesame oil. Toss everything together and stir-fry for another 2-3 minutes until heated through.
- Add chopped green onions and mix well. Adjust seasoning with salt and pepper if needed before serving.
