Ingredients
- Pork bones (neck or trotters) - 500 grams
- Water - 1.5 liters
- Ginger - 10 grams, sliced
- Garlic - 3 cloves, smashed
- Spring onions - 2, cut into 5 cm lengths
- Dried shiitake mushrooms - 2 pieces, soaked in warm water
- Carrot - 1 medium, sliced
- Daikon radish - 100 grams, sliced
- Soy sauce - 1 tablespoon
- Salt - to taste
- White pepper - to taste
- Cilantro - for garnish
Steps
- Rinse the pork bones under cold water to remove any impurities.
- In a large pot, combine the pork bones and 1.5 liters of water. Bring to a boil over high heat.
- Once boiling, skim off any scum that rises to the surface, then add ginger, garlic, spring onions, and soaked shiitake mushrooms.
- Reduce heat to low and cover the pot. Simmer for 1.5 hours, stirring occasionally.
- After 1.5 hours, add the sliced carrot and daikon radish to the pot. Continue to simmer for another 30 minutes.
- Stir in soy sauce, and season with salt and white pepper to taste.
- Remove from heat and strain the soup to separate the bones and vegetables from the broth.
- Serve hot, garnished with fresh cilantro.
