Ingredients

  • Pork bones (neck or trotters) - 500 grams
  • Water - 1.5 liters
  • Ginger - 10 grams, sliced
  • Garlic - 3 cloves, smashed
  • Spring onions - 2, cut into 5 cm lengths
  • Dried shiitake mushrooms - 2 pieces, soaked in warm water
  • Carrot - 1 medium, sliced
  • Daikon radish - 100 grams, sliced
  • Soy sauce - 1 tablespoon
  • Salt - to taste
  • White pepper - to taste
  • Cilantro - for garnish

Steps

  1. Rinse the pork bones under cold water to remove any impurities.
  2. In a large pot, combine the pork bones and 1.5 liters of water. Bring to a boil over high heat.
  3. Once boiling, skim off any scum that rises to the surface, then add ginger, garlic, spring onions, and soaked shiitake mushrooms.
  4. Reduce heat to low and cover the pot. Simmer for 1.5 hours, stirring occasionally.
  5. After 1.5 hours, add the sliced carrot and daikon radish to the pot. Continue to simmer for another 30 minutes.
  6. Stir in soy sauce, and season with salt and white pepper to taste.
  7. Remove from heat and strain the soup to separate the bones and vegetables from the broth.
  8. Serve hot, garnished with fresh cilantro.
