Ingredients

  • Pork belly - 300 grams
  • Soy sauce - 60 ml
  • Brown sugar - 1 tablespoon (15 grams)
  • Garlic - 3 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Spring onions - 2, chopped
  • Star anise - 1 pod
  • Water - 150 ml
  • Vegetable oil - 1 tablespoon (15 ml)
  • Sesame oil - 1 teaspoon (5 ml)

Steps

  1. Cut the pork belly into 2 cm thick slices and set aside.
  2. In a large, heavy-bottomed pot, heat the vegetable oil over medium heat.
  3. Add the minced garlic and grated ginger to the pot, sautéing until fragrant, about 1-2 minutes.
  4. Add the pork belly slices to the pot, searing them on each side until browned, approximately 5-7 minutes.
  5. Stir in the soy sauce, brown sugar, star anise, and water, ensuring the pork is well coated.
  6. Bring the mixture to a simmer, then cover the pot and reduce the heat to low.
  7. Allow the pork to simmer for 1 hour, turning the slices occasionally to ensure even cooking.
  8. After 1 hour, remove the lid and increase the heat to medium-high, allowing the sauce to reduce and thicken for about 15 minutes.
  9. Once the sauce has thickened, remove from heat and drizzle with sesame oil.
  10. Serve the pork belly hot, garnished with chopped spring onions, alongside steamed rice.
