- Water - 150 ml
- Vegetable oil - 1 tablespoon (15 ml)
- Sesame oil - 1 teaspoon (5 ml)
Steps
- Cut the pork belly into 2 cm thick slices and set aside.
- In a large, heavy-bottomed pot, heat the vegetable oil over medium heat.
- Add the minced garlic and grated ginger to the pot, sautéing until fragrant, about 1-2 minutes.
- Add the pork belly slices to the pot, searing them on each side until browned, approximately 5-7 minutes.
- Stir in the soy sauce, brown sugar, star anise, and water, ensuring the pork is well coated.
- Bring the mixture to a simmer, then cover the pot and reduce the heat to low.
- Allow the pork to simmer for 1 hour, turning the slices occasionally to ensure even cooking.
- After 1 hour, remove the lid and increase the heat to medium-high, allowing the sauce to reduce and thicken for about 15 minutes.
- Once the sauce has thickened, remove from heat and drizzle with sesame oil.
- Serve the pork belly hot, garnished with chopped spring onions, alongside steamed rice.
