- Erythritol (or another keto-friendly sweetener) - 1 teaspoon
- Cauliflower (finely grated) - 200 grams
- Psyllium husk - 2 tablespoons
- Eggs - 1 large
- Baking powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Green onions (sliced) - for garnish
- Cucumber (thinly sliced) - for garnish
Steps
- Preheat the oven to 160°C (320°F).
- In a bowl, mix soy sauce, rice vinegar, sesame oil, minced garlic, grated ginger, and erythritol to create a marinade.
- Cut the pork belly into 1-inch pieces and coat with the marinade. Let it marinate for at least 30 minutes.
- Place the marinated pork belly in a baking dish and cover with foil. Bake in the preheated oven for 1 hour, until tender.
- While the pork is baking, prepare the bao bun dough. In a bowl, combine grated cauliflower, psyllium husk, eggs, baking powder, and salt. Mix until well combined.
- Divide the dough into 4 equal portions and shape them into small rounds.
- Steam the bao buns in a bamboo steamer or a pot with a steaming basket for about 10-15 minutes until cooked through.
