Ingredients

  • Sesame oil - 1 tablespoon
  • Garlic (minced) - 2 cloves
  • Ginger (grated) - 1 teaspoon
  • Erythritol (or another keto-friendly sweetener) - 1 teaspoon
  • Cauliflower (finely grated) - 200 grams
  • Psyllium husk - 2 tablespoons
  • Eggs - 1 large
  • Baking powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Green onions (sliced) - for garnish
  • Cucumber (thinly sliced) - for garnish

Steps

  1. Preheat the oven to 160°C (320°F).
  2. In a bowl, mix soy sauce, rice vinegar, sesame oil, minced garlic, grated ginger, and erythritol to create a marinade.
  3. Cut the pork belly into 1-inch pieces and coat with the marinade. Let it marinate for at least 30 minutes.
  4. Place the marinated pork belly in a baking dish and cover with foil. Bake in the preheated oven for 1 hour, until tender.
  5. While the pork is baking, prepare the bao bun dough. In a bowl, combine grated cauliflower, psyllium husk, eggs, baking powder, and salt. Mix until well combined.
  6. Divide the dough into 4 equal portions and shape them into small rounds.
