  • Pork tenderloin - 200 grams, thinly sliced
  • Egg noodles - 150 grams
  • Bell pepper (red) - 1, sliced
  • Carrot - 1 medium, julienned
  • Snow peas - 100 grams
  • Green onions - 2, chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Soy sauce (low sodium) - 3 tablespoons
  • Sesame oil - 1 tablespoon
  • Cornstarch - 1 teaspoon
  • Water - 100 ml
  • Vegetable oil - 2 tablespoons
  • Black pepper - to taste

Steps

  1. Cook the egg noodles according to package instructions, drain, and set aside.
  2. In a small bowl, mix soy sauce, sesame oil, cornstarch, and water to create a sauce. Set aside.
  3. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  4. Add the pork slices to the skillet and stir-fry for about 5-7 minutes until browned and cooked through. Remove the pork from the skillet and set aside.
  5. In the same skillet, add the remaining tablespoon of vegetable oil, then add garlic, ginger, bell pepper, carrot, and snow peas. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
  6. Return the cooked pork to the skillet with the vegetables. Pour the sauce over the mixture and stir to combine, cooking for an additional 2 minutes.
  7. Add the cooked egg noodles to the skillet, tossing everything together until the noodles are well coated in the sauce. Cook for another 1-2 minutes to heat through.
  8. Garnish with chopped green onions and serve hot.
