Ingredients

  • Pork tenderloin - 200 grams, thinly sliced
  • Egg noodles - 150 grams
  • Carrot - 1 medium, julienned
  • Bell pepper - 1 medium, sliced
  • Zucchini - 1 medium, sliced
  • Green onion - 2 stalks, chopped
  • Garlic - 2 cloves, minced
  • Soy sauce - 3 tablespoons (ensure it's kosher)
  • Sesame oil - 1 tablespoon
  • Vegetable oil - 1 tablespoon
  • Cornstarch - 1 teaspoon
  • Water - 100 ml
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Cook the egg noodles according to package instructions. Drain and set aside.
  2. In a bowl, mix the sliced pork with soy sauce, cornstarch, salt, and black pepper. Let it marinate for 10 minutes.
  3. Heat vegetable oil in a large pan or wok over medium-high heat. Add minced garlic and stir-fry for about 30 seconds until fragrant.
  4. Add the marinated pork to the pan and stir-fry for 5-7 minutes until cooked through and slightly browned. Remove the pork from the pan and set aside.
  5. In the same pan, add a bit more oil if needed, and stir-fry the carrots, bell pepper, and zucchini for about 4-5 minutes until they are tender but still crisp.
  6. Return the pork to the pan with the vegetables. Add the cooked noodles, sesame oil, and water. Toss everything together and cook for another 2-3 minutes until heated through and well combined.
  7. Garnish with chopped green onion before serving.
