  • Bell pepper - 1 medium, diced
  • Snow peas - 100 grams, trimmed
  • Green onions - 2, chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Chicken broth - 2 cups (about 480 ml)
  • Cornstarch - 1 teaspoon (optional, for thickening)
  • Water - 1 cup (about 240 ml)
  • Black pepper - to taste
  • Salt - to taste
  • Cooking oil - 1 tablespoon (for stir-frying)

Steps

  1. Heat the cooking oil in a large pot or wok over medium-high heat.
  2. Add the sliced pork tenderloin and stir-fry for about 3-4 minutes until browned and cooked through.
  3. Add minced garlic and grated ginger to the pot, stir-frying for an additional 30 seconds until fragrant.
  4. Stir in the diced carrots and bell pepper, cooking for another 3 minutes until they begin to soften.
  5. Add the snow peas and cooked rice to the pot, mixing well to combine all ingredients.
  6. Pour in the chicken broth and water, and add soy sauce, sesame oil, black pepper, and salt to taste.
  7. Bring the mixture to a simmer and let cook for about 5-7 minutes to allow the flavors to meld.
  8. If you prefer a thicker soup, mix cornstarch with a little water to create a slurry and stir it into the soup, cooking for an additional 2 minutes until thickened.
  9. Finally, stir in chopped green onions just before serving.
  10. Serve hot in bowls, garnished with extra green onions if desired.
