Ingredients

  • Cooked Jasmine rice - 2 cups (preferably day-old)
  • Halal pork tenderloin - 200 grams, thinly sliced
  • Carrot - 1 small, diced
  • Frozen peas - 1/2 cup
  • Green bell pepper - 1/2, diced
  • Egg - 1 large
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Vegetable oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Spring onions - 2, sliced
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the sliced halal pork tenderloin and cook until browned and cooked through, about 5-7 minutes. Remove from the pan and set aside.
  3. In the same pan, add the remaining tablespoon of vegetable oil. Stir in the minced garlic and ginger, cooking for about 30 seconds until fragrant.
  4. Add the diced carrot and bell pepper to the pan and stir-fry for 2-3 minutes until they begin to soften.
  5. Stir in the frozen peas and cooked rice, breaking up any clumps. Mix well to combine with the vegetables.
  6. Push the rice mixture to one side of the pan and crack the egg into the empty space. Scramble the egg until fully cooked, then mix it into the rice.
  7. Return the cooked pork to the pan, and add soy sauce, sesame oil, salt, and black pepper. Stir everything together and cook for an additional 2-3 minutes until heated through.
  8. Garnish with sliced spring onions and serve hot.
