- Cooked Jasmine rice - 2 cups (preferably day-old)
- Halal pork tenderloin - 200 grams, thinly sliced
- Carrot - 1 small, diced
- Frozen peas - 1/2 cup
- Green bell pepper - 1/2, diced
- Egg - 1 large
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Vegetable oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, minced
- Spring onions - 2, sliced
- Salt - to taste
- Black pepper - to taste
Steps
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
- Add the sliced halal pork tenderloin and cook until browned and cooked through, about 5-7 minutes. Remove from the pan and set aside.
- In the same pan, add the remaining tablespoon of vegetable oil. Stir in the minced garlic and ginger, cooking for about 30 seconds until fragrant.
- Add the diced carrot and bell pepper to the pan and stir-fry for 2-3 minutes until they begin to soften.
- Stir in the frozen peas and cooked rice, breaking up any clumps. Mix well to combine with the vegetables.
- Push the rice mixture to one side of the pan and crack the egg into the empty space. Scramble the egg until fully cooked, then mix it into the rice.
- Return the cooked pork to the pan, and add soy sauce, sesame oil, salt, and black pepper. Stir everything together and cook for an additional 2-3 minutes until heated through.
- Garnish with sliced spring onions and serve hot.
