- Jasmine rice - 100g
- Pork loin, thinly sliced - 150g
- Carrot, diced - 50g
- Spinach, chopped - 50g
- Ginger, minced - 1 teaspoon
- Garlic, minced - 1 teaspoon
- Chicken broth - 800ml
- Soy sauce - 1 tablespoon
- Sesame oil - 1 teaspoon
- Salt - to taste
- White pepper - to taste
- Spring onion, chopped - for garnish
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then drain.
- In a large pot, heat the chicken broth over medium heat and add the rinsed rice.
- Bring the mixture to a boil, then reduce the heat to low and simmer for about 30 minutes, stirring occasionally until the rice is soft and the congee reaches a creamy consistency.
- In a separate pan, heat a little sesame oil over medium heat and sauté the minced ginger and garlic until fragrant.
- Add the sliced pork to the pan and cook until browned and cooked through, about 5-7 minutes.
- Stir in the diced carrot and cook for another 2-3 minutes until slightly softened.
- Add the pork and vegetable mixture to the congee, along with the chopped spinach, soy sauce, salt, and white pepper to taste.
- Simmer for an additional 5 minutes to combine the flavors.
- Serve hot, garnished with chopped spring onions.
