Ingredients

  • Jasmine rice - 100g
  • Pork loin, thinly sliced - 150g
  • Carrot, diced - 50g
  • Spinach, chopped - 50g
  • Ginger, minced - 1 teaspoon
  • Garlic, minced - 1 teaspoon
  • Chicken broth - 800ml
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Salt - to taste
  • White pepper - to taste
  • Spring onion, chopped - for garnish

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then drain.
  2. In a large pot, heat the chicken broth over medium heat and add the rinsed rice.
  3. Bring the mixture to a boil, then reduce the heat to low and simmer for about 30 minutes, stirring occasionally until the rice is soft and the congee reaches a creamy consistency.
  4. In a separate pan, heat a little sesame oil over medium heat and sauté the minced ginger and garlic until fragrant.
  5. Add the sliced pork to the pan and cook until browned and cooked through, about 5-7 minutes.
  6. Stir in the diced carrot and cook for another 2-3 minutes until slightly softened.
  7. Add the pork and vegetable mixture to the congee, along with the chopped spinach, soy sauce, salt, and white pepper to taste.
  8. Simmer for an additional 5 minutes to combine the flavors.
  9. Serve hot, garnished with chopped spring onions.
