Ingredients

  • Cooked jasmine rice - 300 grams
  • Pork shoulder, diced - 150 grams
  • Firm tofu, diced - 100 grams
  • Carrot, diced - 50 grams
  • Green peas - 50 grams
  • Spring onions, chopped - 2
  • Garlic, minced - 2 cloves
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Vegetable oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Heat vegetable oil in a large pan or wok over medium-high heat.
  2. Add the diced pork shoulder and cook until browned and cooked through, about 5-7 minutes.
  3. Remove the pork from the pan and set aside.
  4. In the same pan, add the diced tofu and fry until golden on all sides, about 5 minutes. Remove and set aside with the pork.
  5. Add minced garlic and diced carrot to the pan, stir-frying for 2-3 minutes until fragrant.
  6. Add cooked jasmine rice to the pan, breaking up any clumps, and stir-fry for 3-4 minutes until heated through.
  7. Return the cooked pork and tofu to the pan, along with the green peas, soy sauce, sesame oil, salt, and pepper. Stir well to combine.
  8. Finally, add the chopped spring onions and stir-fry for an additional 1-2 minutes.
