- Pork tenderloin - 250 grams, thinly sliced
- Fresh spinach - 200 grams, washed and drained
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, minced
- Soy sauce - 2 tablespoons
- Oyster sauce - 1 tablespoon
- Sesame oil - 1 teaspoon
- Vegetable oil - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Red chili flakes - 1/4 teaspoon (optional)
- Green onion - 1 stalk, chopped for garnish
Steps
- In a bowl, combine the sliced pork with soy sauce, oyster sauce, minced garlic, minced ginger, and a pinch of black pepper. Let it marinate for at least 10 minutes.
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
- Once hot, add the marinated pork to the skillet in a single layer. Cook for 3-4 minutes, stirring occasionally, until the pork is browned and cooked through. Remove the pork from the skillet and set aside.
- In the same skillet, add another tablespoon of vegetable oil. Add the washed spinach and stir-fry for about 2 minutes, or until just wilted.
- Return the cooked pork to the skillet with the spinach, add sesame oil, and red chili flakes (if using). Stir everything together and cook for an additional minute.
- Taste and adjust seasoning with salt and pepper as needed.
- Serve hot, garnished with chopped green onion.
