Ingredients

  • Pork tenderloin - 250 grams, thinly sliced
  • Fresh spinach - 200 grams, washed and drained
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Soy sauce - 2 tablespoons
  • Oyster sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Vegetable oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Red chili flakes - 1/4 teaspoon (optional)
  • Green onion - 1 stalk, chopped for garnish

Steps

  1. In a bowl, combine the sliced pork with soy sauce, oyster sauce, minced garlic, minced ginger, and a pinch of black pepper. Let it marinate for at least 10 minutes.
  2. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  3. Once hot, add the marinated pork to the skillet in a single layer. Cook for 3-4 minutes, stirring occasionally, until the pork is browned and cooked through. Remove the pork from the skillet and set aside.
  4. In the same skillet, add another tablespoon of vegetable oil. Add the washed spinach and stir-fry for about 2 minutes, or until just wilted.
  5. Return the cooked pork to the skillet with the spinach, add sesame oil, and red chili flakes (if using). Stir everything together and cook for an additional minute.
  6. Taste and adjust seasoning with salt and pepper as needed.
  7. Serve hot, garnished with chopped green onion.
