Ingredients

  • Pork tenderloin - 200 grams
  • Fresh spinach - 150 grams
  • Garlic cloves - 2, minced
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Rice vinegar - 1 tablespoon
  • Honey - 1 teaspoon
  • Sesame seeds - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Cucumber - 1 small, sliced
  • Carrot - 1 small, julienned
  • Spring onions - 2, chopped

Steps

  1. In a bowl, combine the soy sauce, minced garlic, sesame oil, rice vinegar, honey, salt, and black pepper. Add the pork tenderloin and marinate for at least 15 minutes.
  2. While the pork is marinating, prepare the salad by washing and drying the spinach, cucumber, and carrot. Place the spinach in a serving bowl and top with sliced cucumber and julienned carrot.
  3. Heat a pan over medium heat and cook the marinated pork for about 5-7 minutes on each side, or until fully cooked and browned. Remove from heat and let it rest for a few minutes before slicing.
  4. Slice the pork thinly and place it on top of the spinach salad. Drizzle any remaining marinade over the salad.
  5. Sprinkle sesame seeds and chopped spring onions over the top before serving.
