Ingredients

  • Pork tenderloin - 250 grams, sliced into thin strips
  • Pineapple chunks - 150 grams, fresh or canned (in juice, drained)
  • Bell pepper - 1 medium (any color), sliced
  • Carrot - 1 medium, julienned
  • Green onion - 2 stalks, chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Soy sauce - 2 tablespoons (ensure it's kosher)
  • Cornstarch - 1 tablespoon
  • Vegetable oil - 2 tablespoons
  • Black pepper - to taste
  • Sesame seeds - for garnish (optional)

Steps

  1. In a bowl, mix the sliced pork with soy sauce, cornstarch, and black pepper. Let it marinate for about 10 minutes.
  2. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  3. Add the marinated pork to the skillet and stir-fry for about 5-7 minutes, or until the pork is browned and cooked through. Remove the pork from the skillet and set aside.
  4. In the same skillet, add the remaining tablespoon of oil. Add the minced garlic and ginger, stir-frying for about 30 seconds until fragrant.
  5. Add the sliced bell pepper and julienned carrot to the skillet and stir-fry for 3-4 minutes until they are slightly tender but still crisp.
  6. Return the cooked pork to the skillet, and add the pineapple chunks and chopped green onion. Stir everything together, cooking for another 2-3 minutes to heat through.
  7. Serve hot, garnished with sesame seeds if desired.
