Ingredients

  • Pork shoulder - 200 grams, diced
  • Shiitake mushrooms - 100 grams, sliced
  • Green onions - 2, chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Soy sauce - 2 tablespoons
  • Oyster sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • All-purpose flour - 250 grams
  • Butter - 125 grams, cold and cubed
  • Ice water - 5-6 tablespoons
  • Egg - 1, beaten (for egg wash)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a large skillet, heat sesame oil over medium heat, then add garlic and ginger. Sauté for 1 minute until fragrant.
  3. Add diced pork and cook until browned, about 5-7 minutes.
  4. Stir in shiitake mushrooms, soy sauce, oyster sauce, salt, and black pepper. Cook for another 5 minutes, then add chopped green onions. Remove from heat and let cool.
  5. In a mixing bowl, combine all-purpose flour and cold butter. Use a pastry cutter or fingers to mix until the mixture resembles coarse crumbs.
  6. Gradually add ice water, one tablespoon at a time, mixing until the dough just comes together. Form into a disc, wrap in plastic, and refrigerate for 30 minutes.
  7. Roll out the dough on a floured surface to fit a pie dish. Place half the dough in the dish, fill with the pork and mushroom mixture, and cover with the remaining dough. Seal and crimp the edges.
  8. Brush the top with beaten egg and cut a few slits for steam to escape.
  9. Bake in the preheated oven for 25-30 minutes or until golden brown. Let cool for 5 minutes before serving.
