Ingredients
- Pork shoulder - 200 grams, diced
- Shiitake mushrooms - 100 grams, sliced
- Green onions - 2, chopped
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Soy sauce - 2 tablespoons
- Oyster sauce - 1 tablespoon
- Sesame oil - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- All-purpose flour - 250 grams
- Butter - 125 grams, cold and cubed
- Ice water - 5-6 tablespoons
- Egg - 1, beaten (for egg wash)
Steps
- Preheat the oven to 200°C (400°F).
- In a large skillet, heat sesame oil over medium heat, then add garlic and ginger. Sauté for 1 minute until fragrant.
- Add diced pork and cook until browned, about 5-7 minutes.
- Stir in shiitake mushrooms, soy sauce, oyster sauce, salt, and black pepper. Cook for another 5 minutes, then add chopped green onions. Remove from heat and let cool.
- In a mixing bowl, combine all-purpose flour and cold butter. Use a pastry cutter or fingers to mix until the mixture resembles coarse crumbs.
- Gradually add ice water, one tablespoon at a time, mixing until the dough just comes together. Form into a disc, wrap in plastic, and refrigerate for 30 minutes.
- Roll out the dough on a floured surface to fit a pie dish. Place half the dough in the dish, fill with the pork and mushroom mixture, and cover with the remaining dough. Seal and crimp the edges.
- Brush the top with beaten egg and cut a few slits for steam to escape.
- Bake in the preheated oven for 25-30 minutes or until golden brown. Let cool for 5 minutes before serving.
