Ingredients

  • Cooked rice - 2 cups (preferably day-old)
  • Pork tenderloin - 150 grams, thinly sliced
  • Firm tofu - 100 grams, diced
  • Green bell pepper - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Green onions - 2 stalks, chopped
  • Gluten-free soy sauce - 3 tablespoons
  • Sesame oil - 1 tablespoon
  • Vegetable oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Egg - 1 large, beaten
  • Cilantro - for garnish (optional)

Steps

  1. Start by marinating the sliced pork in 1 tablespoon of gluten-free soy sauce and a pinch of black pepper for about 10 minutes.
  2. In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the marinated pork and stir-fry for 3-4 minutes until cooked through. Remove the pork from the pan and set aside.
  3. In the same pan, add another tablespoon of vegetable oil, then add the diced tofu and cook until golden brown on all sides, about 5-6 minutes. Remove and set aside with the pork.
  4. Add the minced garlic, ginger, and green bell pepper to the pan, stir-frying for 2-3 minutes until the peppers are slightly softened.
  5. Push the vegetables to the side of the pan, add the beaten egg, and scramble until fully cooked. Mix with the vegetables.
  6. Add the cooked rice to the pan, breaking up any clumps. Stir in the cooked pork and tofu, remaining gluten-free soy sauce, sesame oil, and chopped green onions. Stir-fry everything together for another 3-4 minutes until heated through.
  7. Season with salt and black pepper to taste. Serve hot, garnished with cilantro if desired.
