- Cooked rice - 2 cups (preferably day-old)
- Pork tenderloin - 150 grams, thinly sliced
- Firm tofu - 100 grams, diced
- Green bell pepper - 1 medium, diced
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, minced
- Green onions - 2 stalks, chopped
- Gluten-free soy sauce - 3 tablespoons
- Sesame oil - 1 tablespoon
- Vegetable oil - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Egg - 1 large, beaten
- Cilantro - for garnish (optional)
Steps
- Start by marinating the sliced pork in 1 tablespoon of gluten-free soy sauce and a pinch of black pepper for about 10 minutes.
- In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the marinated pork and stir-fry for 3-4 minutes until cooked through. Remove the pork from the pan and set aside.
- In the same pan, add another tablespoon of vegetable oil, then add the diced tofu and cook until golden brown on all sides, about 5-6 minutes. Remove and set aside with the pork.
- Add the minced garlic, ginger, and green bell pepper to the pan, stir-frying for 2-3 minutes until the peppers are slightly softened.
- Push the vegetables to the side of the pan, add the beaten egg, and scramble until fully cooked. Mix with the vegetables.
- Add the cooked rice to the pan, breaking up any clumps. Stir in the cooked pork and tofu, remaining gluten-free soy sauce, sesame oil, and chopped green onions. Stir-fry everything together for another 3-4 minutes until heated through.
- Season with salt and black pepper to taste. Serve hot, garnished with cilantro if desired.
