Ingredients

  • Pork tenderloin - 300 grams, thinly sliced
  • Green beans - 200 grams, trimmed
  • Basmati rice - 150 grams, uncooked
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Gluten-free soy sauce - 3 tablespoons
  • Sesame oil - 1 tablespoon
  • Cornstarch - 1 tablespoon
  • Vegetable oil - 2 tablespoons
  • Water - 300 milliliters
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the basmati rice under cold water until the water runs clear. In a pot, combine the rice and 300 ml of water, bring to a boil, then reduce to a simmer and cover. Cook for 15 minutes or until the water is absorbed.
  2. In a bowl, combine the sliced pork, gluten-free soy sauce, cornstarch, and a pinch of black pepper. Allow it to marinate for about 10 minutes.
  3. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated pork and stir-fry for about 5-7 minutes until browned and cooked through. Remove the pork from the skillet and set aside.
  4. In the same skillet, add the remaining tablespoon of vegetable oil. Add the minced garlic and ginger, and sauté for 30 seconds until fragrant.
  5. Add the trimmed green beans to the skillet and stir-fry for 4-5 minutes until they are bright green and tender-crisp.
  6. Return the cooked pork to the skillet, mix well with the green beans, and drizzle with sesame oil. Stir-fry for an additional 2 minutes to combine all flavors.
  7. Taste and adjust seasoning with salt and pepper if needed. Serve the stir-fry over the cooked basmati rice.
