- Jasmine rice - 1 cup (200g)
- Pork tenderloin - 200g, thinly sliced
- Green beans - 150g, trimmed and cut into 1-inch pieces
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, minced
- Soy sauce (gluten-free) - 2 tablespoons
- Sesame oil - 1 tablespoon
- Vegetable oil - 2 tablespoons
- Spring onions - 2, chopped
- Egg - 1, beaten
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then cook according to package instructions. Once cooked, fluff with a fork and set aside.
- In a large wok or skillet, heat the vegetable oil over medium-high heat. Add the sliced pork and stir-fry for about 3-4 minutes until browned and cooked through.
- Add the minced garlic and ginger to the wok, cooking for an additional 1 minute until fragrant.
- Stir in the green beans and continue to stir-fry for another 2-3 minutes until they are bright green and tender-crisp.
- Push the pork and green beans to one side of the wok, then pour the beaten egg into the empty space. Scramble the egg until fully cooked, then mix it with the pork and vegetables.
- Add the cooked rice to the wok, followed by the soy sauce and sesame oil. Stir everything together, breaking up any clumps of rice, and cook for another 2-3 minutes until heated through.
- Season with salt and black pepper to taste, and stir in the chopped spring onions just before serving.
