- Pork tenderloin - 250 grams, thinly sliced
- Eggplant - 200 grams, cubed
- Bell pepper - 1 medium, sliced
- Garlic - 3 cloves, minced
- Ginger - 1 tablespoon, minced
- Soy sauce - 2 tablespoons
- Oyster sauce - 1 tablespoon
- Cornstarch - 1 teaspoon
- Vegetable oil - 2 tablespoons
- Green onions - 2, chopped
- Sesame oil - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
Steps
- In a bowl, marinate the sliced pork with soy sauce, cornstarch, and a pinch of black pepper for about 10 minutes.
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
- Add the marinated pork to the skillet and stir-fry for 5-7 minutes until cooked through. Remove pork from the skillet and set aside.
- In the same skillet, add the remaining tablespoon of vegetable oil, then add minced garlic and ginger, stir-frying for about 30 seconds until fragrant.
- Add the cubed eggplant and sliced bell pepper to the skillet, cooking for about 5-6 minutes until the vegetables are tender.
- Return the cooked pork to the skillet, add oyster sauce, and mix well. Stir-fry everything together for another 2-3 minutes to combine flavors.
- Drizzle with sesame oil and sprinkle chopped green onions on top before serving. Adjust salt and pepper to taste.
