Ingredients

  • Pork tenderloin - 250 grams, thinly sliced
  • Eggplant - 200 grams, cubed
  • Bell pepper - 1 medium, sliced
  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, minced
  • Soy sauce - 2 tablespoons
  • Oyster sauce - 1 tablespoon
  • Cornstarch - 1 teaspoon
  • Vegetable oil - 2 tablespoons
  • Green onions - 2, chopped
  • Sesame oil - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a bowl, marinate the sliced pork with soy sauce, cornstarch, and a pinch of black pepper for about 10 minutes.
  2. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  3. Add the marinated pork to the skillet and stir-fry for 5-7 minutes until cooked through. Remove pork from the skillet and set aside.
  4. In the same skillet, add the remaining tablespoon of vegetable oil, then add minced garlic and ginger, stir-frying for about 30 seconds until fragrant.
  5. Add the cubed eggplant and sliced bell pepper to the skillet, cooking for about 5-6 minutes until the vegetables are tender.
  6. Return the cooked pork to the skillet, add oyster sauce, and mix well. Stir-fry everything together for another 2-3 minutes to combine flavors.
  7. Drizzle with sesame oil and sprinkle chopped green onions on top before serving. Adjust salt and pepper to taste.
