Ingredients

  • Pork tenderloin - 150 grams, thinly sliced
  • Eggplant - 150 grams, diced
  • Firm tofu - 100 grams, cubed
  • Cooked jasmine rice - 2 cups (about 300 grams)
  • Green onions - 2, chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Soy sauce (gluten-free) - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Vegetable oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Red chili flakes - 1/2 teaspoon (optional)

Steps

  1. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the cubed tofu and fry until golden brown on all sides, about 5-7 minutes. Remove the tofu from the pan and set aside.
  3. In the same skillet, add another tablespoon of vegetable oil. Add the sliced pork and stir-fry until browned and cooked through, about 4-5 minutes. Remove the pork and set aside with the tofu.
  4. Add the diced eggplant to the skillet and stir-fry for about 4 minutes until softened. Add the minced garlic and ginger, and cook for an additional minute until fragrant.
  5. Return the cooked pork and tofu to the skillet. Add the cooked jasmine rice, soy sauce, sesame oil, green onions, and red chili flakes (if using). Stir well to combine and heat through, about 3-4 minutes.
  6. Season with salt and black pepper to taste. Serve hot.
