- Cooked jasmine rice - 2 cups
- Pork tenderloin, thinly sliced - 150 grams
- Eggplant, diced - 1 medium (about 200 grams)
- Green onions, chopped - 2 stalks
- Garlic, minced - 2 cloves
- Ginger, minced - 1 teaspoon
- Gluten-free soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Vegetable oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Egg - 1 large
Steps
- Prepare all ingredients: slice the pork, dice the eggplant, chop the green onions, and mince the garlic and ginger.
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Add the pork to the skillet and stir-fry until cooked through, about 3-4 minutes. Remove the pork from the skillet and set aside.
- In the same skillet, add the diced eggplant and stir-fry for about 5-6 minutes until soft and browned.
- Add the minced garlic and ginger to the skillet, and stir-fry for another minute until fragrant.
- Return the cooked pork to the skillet, then add the cooked jasmine rice, gluten-free soy sauce, and sesame oil. Stir well to combine all ingredients.
- Make a well in the center of the rice mixture and crack the egg into it. Scramble the egg gently and then mix it into the rice until fully cooked.
- Add chopped green onions, season with salt and black pepper to taste, and stir well to combine everything.
- Serve hot, garnished with additional green onions if desired.
