Ingredients

  • Pork tenderloin - 200 grams, sliced thinly
  • Eggs - 4 large
  • Bell pepper - 1 medium, sliced
  • Green onions - 2 stalks, chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Vegetable oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a bowl, whisk the eggs with a pinch of salt and pepper. Set aside.
  2. Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the sliced pork and stir-fry for about 3-4 minutes until browned and cooked through.
  3. Add the minced garlic and ginger to the skillet, stirring for about 30 seconds until fragrant.
  4. Add the sliced bell pepper and half of the chopped green onions to the skillet. Stir-fry for another 2-3 minutes until the vegetables are just tender.
  5. Push the pork and vegetables to one side of the skillet. Pour the whisked eggs into the empty side and scramble until fully cooked, then mix everything together.
  6. Drizzle the soy sauce and sesame oil over the stir-fry, tossing to combine. Adjust seasoning with salt and pepper to taste.
  7. Serve hot, garnished with the remaining green onions.
