- Pork tenderloin - 200 grams, sliced thinly
- Eggs - 4 large
- Bell pepper - 1 medium, sliced
- Green onions - 2 stalks, chopped
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, minced
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Vegetable oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- In a bowl, whisk the eggs with a pinch of salt and pepper. Set aside.
- Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the sliced pork and stir-fry for about 3-4 minutes until browned and cooked through.
- Add the minced garlic and ginger to the skillet, stirring for about 30 seconds until fragrant.
- Add the sliced bell pepper and half of the chopped green onions to the skillet. Stir-fry for another 2-3 minutes until the vegetables are just tender.
- Push the pork and vegetables to one side of the skillet. Pour the whisked eggs into the empty side and scramble until fully cooked, then mix everything together.
- Drizzle the soy sauce and sesame oil over the stir-fry, tossing to combine. Adjust seasoning with salt and pepper to taste.
- Serve hot, garnished with the remaining green onions.
