- Cooked jasmine rice - 300 grams
- Halal pork tenderloin, diced - 150 grams
- Eggs - 2 large
- Green peas - 50 grams
- Carrot, diced - 50 grams
- Spring onion, chopped - 2 stalks
- Garlic, minced - 2 cloves
- Soy sauce - 2 tablespoons
- Sesame oil - 1 teaspoon
- Vegetable oil - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
Steps
- Heat 1 tablespoon of vegetable oil in a large pan or wok over medium heat.
- Add the diced halal pork tenderloin and cook until browned and cooked through, about 5-7 minutes. Remove from the pan and set aside.
- In the same pan, add another tablespoon of vegetable oil. Add minced garlic and diced carrots, sautéing for 2-3 minutes until the carrots are tender.
- Push the vegetables to one side of the pan and crack the eggs into the empty space. Scramble the eggs until fully cooked, then mix with the vegetables.
- Add the cooked rice, green peas, and the cooked pork back into the pan. Stir to combine all ingredients.
- Pour the soy sauce and sesame oil over the rice mixture, seasoning with salt and black pepper to taste. Stir-fry everything together for another 3-5 minutes until heated through.
- Garnish with chopped spring onion before serving.
