Ingredients

  • Cooked jasmine rice - 300 grams
  • Halal pork tenderloin, diced - 150 grams
  • Eggs - 2 large
  • Green peas - 50 grams
  • Carrot, diced - 50 grams
  • Spring onion, chopped - 2 stalks
  • Garlic, minced - 2 cloves
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 teaspoon
  • Vegetable oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Heat 1 tablespoon of vegetable oil in a large pan or wok over medium heat.
  2. Add the diced halal pork tenderloin and cook until browned and cooked through, about 5-7 minutes. Remove from the pan and set aside.
  3. In the same pan, add another tablespoon of vegetable oil. Add minced garlic and diced carrots, sautéing for 2-3 minutes until the carrots are tender.
  4. Push the vegetables to one side of the pan and crack the eggs into the empty space. Scramble the eggs until fully cooked, then mix with the vegetables.
  5. Add the cooked rice, green peas, and the cooked pork back into the pan. Stir to combine all ingredients.
  6. Pour the soy sauce and sesame oil over the rice mixture, seasoning with salt and black pepper to taste. Stir-fry everything together for another 3-5 minutes until heated through.
  7. Garnish with chopped spring onion before serving.
