  • Napa cabbage - 150 grams, shredded
  • Carrot - 1 medium, julienned
  • Green onions - 2, sliced
  • Cilantro - 2 tablespoons, chopped
  • Almonds - 30 grams, sliced
  • Lime juice - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Coconut aminos - 1 tablespoon
  • Garlic - 1 clove, minced
  • Ginger - 1 teaspoon, grated
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. 1. Start by cooking the pork tenderloin. Season it with salt and black pepper, then heat a skillet over medium-high heat and add a bit of oil. Sear the pork for about 4-5 minutes on each side until cooked through. Remove from heat and let it rest for 5 minutes before slicing thinly.
  2. 2. In a large bowl, combine the shredded Napa cabbage, julienned carrot, sliced green onions, chopped cilantro, and sliced almonds.
  3. 3. In a separate small bowl, whisk together the lime juice, sesame oil, coconut aminos, minced garlic, and grated ginger to create the dressing.
  4. 4. Add the sliced pork to the salad bowl and drizzle the dressing over the top. Toss everything together gently until well combined.
  5. 5. Adjust seasoning with additional salt and pepper if desired. Serve immediately, either chilled or at room temperature.
