Ingredients
- Pork tenderloin - 250 grams, thinly sliced
- Red bell pepper - 1 medium, sliced
- Green bell pepper - 1 medium, sliced
- Yellow bell pepper - 1 medium, sliced
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, minced
- Soy sauce (Halal) - 3 tablespoons
- Oyster sauce - 1 tablespoon
- Cornstarch - 1 tablespoon
- Vegetable oil - 2 tablespoons
- Sesame oil - 1 teaspoon
- Spring onions - 2, chopped for garnish
- Salt - to taste
- Black pepper - to taste
Steps
- In a bowl, combine the sliced pork tenderloin with soy sauce, oyster sauce, cornstarch, and a pinch of salt and black pepper. Marinate for 10 minutes.
- Heat vegetable oil in a large pan or wok over medium-high heat. Add the marinated pork and stir-fry for 5-7 minutes until the pork is browned and cooked through. Remove the pork from the pan and set aside.
- In the same pan, add a little more oil if needed, and add the minced garlic and ginger. Stir-fry for about 30 seconds until fragrant.
- Add the sliced bell peppers to the pan and stir-fry for 3-4 minutes until they are slightly tender but still crisp.
- Return the cooked pork to the pan with the bell peppers and stir everything together. Drizzle with sesame oil and adjust seasoning if necessary.
- Cook for an additional 1-2 minutes to heat through, then remove from heat.
- Serve hot, garnished with chopped spring onions.
