Ingredients

  • Pork tenderloin - 250 grams, thinly sliced
  • Red bell pepper - 1 medium, sliced
  • Green bell pepper - 1 medium, sliced
  • Yellow bell pepper - 1 medium, sliced
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Soy sauce (Halal) - 3 tablespoons
  • Oyster sauce - 1 tablespoon
  • Cornstarch - 1 tablespoon
  • Vegetable oil - 2 tablespoons
  • Sesame oil - 1 teaspoon
  • Spring onions - 2, chopped for garnish
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a bowl, combine the sliced pork tenderloin with soy sauce, oyster sauce, cornstarch, and a pinch of salt and black pepper. Marinate for 10 minutes.
  2. Heat vegetable oil in a large pan or wok over medium-high heat. Add the marinated pork and stir-fry for 5-7 minutes until the pork is browned and cooked through. Remove the pork from the pan and set aside.
  3. In the same pan, add a little more oil if needed, and add the minced garlic and ginger. Stir-fry for about 30 seconds until fragrant.
  4. Add the sliced bell peppers to the pan and stir-fry for 3-4 minutes until they are slightly tender but still crisp.
  5. Return the cooked pork to the pan with the bell peppers and stir everything together. Drizzle with sesame oil and adjust seasoning if necessary.
  6. Cook for an additional 1-2 minutes to heat through, then remove from heat.
  7. Serve hot, garnished with chopped spring onions.
