Ingredients

  • Radishes - 200 grams
  • Rice vinegar - 100 ml
  • Water - 100 ml
  • Sugar - 1 tablespoon (15 grams)
  • Salt - 1 teaspoon (5 grams)
  • Sesame oil - 1 teaspoon (5 ml)
  • Chili flakes - 1/2 teaspoon (optional)

Steps

  1. Wash and trim the radishes, then slice them thinly into rounds or matchsticks.
  2. In a small saucepan, combine the rice vinegar, water, sugar, salt, and sesame oil. Heat over medium heat, stirring until the sugar and salt dissolve completely.
  3. Remove the saucepan from heat and let the pickling liquid cool for a few minutes.
  4. Place the sliced radishes in a clean glass jar. If using, sprinkle the chili flakes over the radishes.
  5. Pour the cooled pickling liquid over the radishes, ensuring they are fully submerged.
  6. Seal the jar and refrigerate for at least 2 hours before serving. For best flavor, let them pickle overnight.
