Ingredients

  • Mustard greens - 200 grams
  • Water - 250 ml
  • Rice vinegar - 100 ml
  • Soy sauce - 30 ml
  • Sugar - 1 tablespoon
  • Salt - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Chili flakes - 1 teaspoon (optional)

Steps

  1. Wash the mustard greens thoroughly under running water to remove any dirt or grit.
  2. In a large pot, bring 250 ml of water to a boil. Add the mustard greens and blanch for about 2 minutes until they are bright green and slightly tender.
  3. Remove the mustard greens from the pot and immediately transfer them to a bowl of ice water to stop the cooking process. Let them cool for 5 minutes, then drain and squeeze out excess water.
  4. In a separate bowl, mix together the rice vinegar, soy sauce, sugar, salt, minced garlic, and chili flakes (if using). Stir until the sugar and salt are fully dissolved.
  5. Place the cooled mustard greens into a clean glass jar and pour the vinegar mixture over them, ensuring the greens are fully submerged.
  6. Seal the jar tightly and refrigerate for at least 24 hours before consuming to allow the flavors to develop.
