Ingredients
- Mustard greens - 200 grams
- Water - 250 ml
- Rice vinegar - 100 ml
- Soy sauce - 30 ml
- Sugar - 1 tablespoon
- Salt - 1 tablespoon
- Garlic - 2 cloves, minced
- Chili flakes - 1 teaspoon (optional)
Steps
- Wash the mustard greens thoroughly under running water to remove any dirt or grit.
- In a large pot, bring 250 ml of water to a boil. Add the mustard greens and blanch for about 2 minutes until they are bright green and slightly tender.
- Remove the mustard greens from the pot and immediately transfer them to a bowl of ice water to stop the cooking process. Let them cool for 5 minutes, then drain and squeeze out excess water.
- In a separate bowl, mix together the rice vinegar, soy sauce, sugar, salt, minced garlic, and chili flakes (if using). Stir until the sugar and salt are fully dissolved.
- Place the cooled mustard greens into a clean glass jar and pour the vinegar mixture over them, ensuring the greens are fully submerged.
- Seal the jar tightly and refrigerate for at least 24 hours before consuming to allow the flavors to develop.
