Steps
- Start by peeling the daikon radish, carrot, and cucumber. Slice the daikon and carrot into thin matchsticks and julienne the cucumber.
- In a mixing bowl, combine the rice vinegar, soy sauce, maple syrup, sesame oil, and salt to create the pickling marinade.
- Add the sliced daikon and carrot to the marinade, tossing to ensure they are well-coated. Let them pickle for at least 15 minutes.
