  • Water - 100 milliliters
  • Garlic - 1 clove, sliced
  • Red chili flakes - 1/2 teaspoon (optional)

Steps

  1. Wash and peel the daikon radish, then slice it into thin rounds or matchsticks.
  2. In a bowl, sprinkle the salt over the daikon slices and let them sit for 10 minutes to draw out excess moisture.
  3. Meanwhile, in a small saucepan, combine the rice vinegar, water, sugar, and sliced garlic. Heat over medium heat until the sugar dissolves, then remove from heat.
  4. Rinse the daikon slices under cold water and gently pat them dry with a paper towel.
