Ingredients
- Duck breast - 300 grams
- Soy sauce - 2 tablespoons
- Hoisin sauce - 2 tablespoons
- Chinese five-spice powder - 1 teaspoon
- Rice vinegar - 1 tablespoon
- Green onions - 2, chopped
- Cucumber - 100 grams, julienned
- Carrot - 100 grams, julienned
- Chinese pancakes (or tortilla wraps) - 4
- Sesame oil - 1 teaspoon
Steps
- Preheat your oven to 200°C (400°F).
- Score the skin of the duck breast in a diamond pattern, being careful not to cut into the meat.
- Rub the soy sauce, hoisin sauce, five-spice powder, and rice vinegar all over the duck breast, making sure to coat both sides.
- Place the duck breast skin-side up on a baking tray and roast in the oven for 25-30 minutes, or until the skin is crispy and the internal temperature reaches 74°C (165°F).
- Remove the duck from the oven and let it rest for 5-10 minutes before slicing it thinly.
- While the duck is resting, prepare the vegetables by chopping the green onions, julienning the cucumber and carrot.
- Warm the Chinese pancakes (or tortilla wraps) in a dry skillet over medium heat for about 30 seconds on each side to make them pliable.
- To assemble the wraps, place a few slices of duck on a pancake, add some cucumber, carrot, and green onions, and drizzle with sesame oil and extra hoisin sauce if desired.
- Roll the pancake around the filling tightly and serve immediately.
