- Duck breast - 300 grams
- Duck bones - 200 grams
- Water - 1 liter
- Ginger - 20 grams, sliced
- Garlic - 3 cloves, minced
- Scallions - 2, chopped
- Soy sauce (kosher) - 2 tablespoons
- Rice wine (kosher) - 1 tablespoon
- Star anise - 2 pods
- Chinese five-spice powder - 1 teaspoon
- Carrot - 1 medium, sliced
- Mushrooms (shiitake or enoki) - 100 grams, sliced
- Cilantro - a handful, for garnish
- Salt - to taste
- Pepper - to taste
Steps
- In a large pot, add the duck bones and 1 liter of water. Bring to a boil, then reduce heat and simmer for 30 minutes to create a rich broth.
- After 30 minutes, add the sliced ginger, minced garlic, chopped scallions, soy sauce, rice wine, star anise, five-spice powder, sliced carrot, and mushrooms to the pot.
- Simmer the broth for an additional 15 minutes to allow the flavors to meld together.
- While the broth is simmering, heat a skillet over medium heat. Score the skin of the duck breast and place it skin-side down in the skillet. Cook for about 6-8 minutes until the skin is crispy.
- Flip the duck breast and cook for another 4-5 minutes until the internal temperature reaches 75°C (165°F). Remove from heat and let it rest for a few minutes.
- Slice the duck breast thinly and set aside.
- Strain the broth to remove the solids and return the liquid to the pot. Taste and season with salt and pepper as needed.
- To serve, divide the sliced duck breast between two bowls and ladle the hot broth and vegetables over the top. Garnish with fresh cilantro.
