Ingredients

  • Duck breast - 300 grams
  • Duck bones - 200 grams
  • Water - 1 liter
  • Ginger - 20 grams, sliced
  • Garlic - 3 cloves, minced
  • Scallions - 2, chopped
  • Soy sauce (kosher) - 2 tablespoons
  • Rice wine (kosher) - 1 tablespoon
  • Star anise - 2 pods
  • Chinese five-spice powder - 1 teaspoon
  • Carrot - 1 medium, sliced
  • Mushrooms (shiitake or enoki) - 100 grams, sliced
  • Cilantro - a handful, for garnish
  • Salt - to taste
  • Pepper - to taste

Steps

  1. In a large pot, add the duck bones and 1 liter of water. Bring to a boil, then reduce heat and simmer for 30 minutes to create a rich broth.
  2. After 30 minutes, add the sliced ginger, minced garlic, chopped scallions, soy sauce, rice wine, star anise, five-spice powder, sliced carrot, and mushrooms to the pot.
  3. Simmer the broth for an additional 15 minutes to allow the flavors to meld together.
  4. While the broth is simmering, heat a skillet over medium heat. Score the skin of the duck breast and place it skin-side down in the skillet. Cook for about 6-8 minutes until the skin is crispy.
  5. Flip the duck breast and cook for another 4-5 minutes until the internal temperature reaches 75°C (165°F). Remove from heat and let it rest for a few minutes.
  6. Slice the duck breast thinly and set aside.
  7. Strain the broth to remove the solids and return the liquid to the pot. Taste and season with salt and pepper as needed.
  8. To serve, divide the sliced duck breast between two bowls and ladle the hot broth and vegetables over the top. Garnish with fresh cilantro.
