Ingredients
- Duck breast - 200 grams
- Mixed salad greens (spinach, arugula, romaine) - 100 grams
- Cucumber - 1 medium, julienned
- Carrot - 1 medium, julienned
- Red bell pepper - 1 medium, sliced
- Green onions - 2, chopped
- Fresh cilantro - 20 grams, chopped
- Sesame oil - 1 tablespoon
- Rice vinegar - 2 tablespoons
- Soy sauce - 1 tablespoon
- Honey - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Sesame seeds - 1 teaspoon, for garnish
Steps
- Preheat the oven to 200°C (400°F).
- Score the skin of the duck breast in a crisscross pattern and season with salt and pepper.
- Place the duck breast skin-side down in a cold skillet over medium heat. Slowly render the fat for about 5-7 minutes until the skin is crispy.
- Flip the duck breast and sear the other side for 2 minutes. Transfer the skillet to the preheated oven and roast for an additional 10-12 minutes for medium-rare.
- Remove the duck from the oven and let it rest for 5 minutes before slicing it thinly.
- In a large bowl, combine the mixed salad greens, cucumber, carrot, red bell pepper, green onions, and cilantro.
- In a small bowl, whisk together the sesame oil, rice vinegar, soy sauce, and honey. Adjust seasoning with salt and pepper to taste.
- Drizzle the dressing over the salad and toss gently to combine.
- Divide the salad onto two plates and top with the sliced duck breast. Garnish with sesame seeds before serving.
