Ingredients

  • Duck breast - 200 grams
  • Mixed salad greens (spinach, arugula, romaine) - 100 grams
  • Cucumber - 1 medium, julienned
  • Carrot - 1 medium, julienned
  • Red bell pepper - 1 medium, sliced
  • Green onions - 2, chopped
  • Fresh cilantro - 20 grams, chopped
  • Sesame oil - 1 tablespoon
  • Rice vinegar - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Honey - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Sesame seeds - 1 teaspoon, for garnish

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Score the skin of the duck breast in a crisscross pattern and season with salt and pepper.
  3. Place the duck breast skin-side down in a cold skillet over medium heat. Slowly render the fat for about 5-7 minutes until the skin is crispy.
  4. Flip the duck breast and sear the other side for 2 minutes. Transfer the skillet to the preheated oven and roast for an additional 10-12 minutes for medium-rare.
  5. Remove the duck from the oven and let it rest for 5 minutes before slicing it thinly.
  6. In a large bowl, combine the mixed salad greens, cucumber, carrot, red bell pepper, green onions, and cilantro.
  7. In a small bowl, whisk together the sesame oil, rice vinegar, soy sauce, and honey. Adjust seasoning with salt and pepper to taste.
  8. Drizzle the dressing over the salad and toss gently to combine.
  9. Divide the salad onto two plates and top with the sliced duck breast. Garnish with sesame seeds before serving.
