Ingredients

  • Duck breast - 200 grams
  • Hoisin sauce - 2 tablespoons
  • Spring onion - 2 stalks, sliced thinly
  • Cucumber - 1 small, julienned
  • Chinese pancakes (or tortillas) - 4 pieces
  • Sesame oil - 1 teaspoon
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Preheat the oven to 200°C (392°F).
  2. Score the skin of the duck breast in a crisscross pattern, being careful not to cut into the meat.
  3. Season the duck breast with salt and pepper on both sides.
  4. Place the duck breast skin-side down in a cold, dry skillet over medium heat and cook for about 6-8 minutes until the fat has rendered and the skin is crispy. Flip and cook for another 4-5 minutes.
  5. Transfer the duck breast to the preheated oven and roast for an additional 10 minutes for medium-rare. Adjust cooking time based on your preferred doneness.
  6. Remove the duck from the oven and let it rest for 5 minutes before slicing thinly.
  7. In a bowl, combine the sliced duck with hoisin sauce and sesame oil, mixing well.
  8. To assemble the rolls, take a Chinese pancake or tortilla and place a few slices of duck, some spring onion, and cucumber in the center.
  9. Roll the pancake tightly, folding in the edges to secure the filling. Repeat with the remaining pancakes.
  10. Slice the rolls in half and serve immediately with extra hoisin sauce on the side.
