- Duck breast - 200 grams
- Hoisin sauce - 2 tablespoons
- Spring onion - 2 stalks, sliced thinly
- Cucumber - 1 small, julienned
- Chinese pancakes (or tortillas) - 4 pieces
- Sesame oil - 1 teaspoon
- Salt - to taste
- Pepper - to taste
Steps
- Preheat the oven to 200°C (392°F).
- Score the skin of the duck breast in a crisscross pattern, being careful not to cut into the meat.
- Season the duck breast with salt and pepper on both sides.
- Place the duck breast skin-side down in a cold, dry skillet over medium heat and cook for about 6-8 minutes until the fat has rendered and the skin is crispy. Flip and cook for another 4-5 minutes.
- Transfer the duck breast to the preheated oven and roast for an additional 10 minutes for medium-rare. Adjust cooking time based on your preferred doneness.
- Remove the duck from the oven and let it rest for 5 minutes before slicing thinly.
- In a bowl, combine the sliced duck with hoisin sauce and sesame oil, mixing well.
- To assemble the rolls, take a Chinese pancake or tortilla and place a few slices of duck, some spring onion, and cucumber in the center.
- Roll the pancake tightly, folding in the edges to secure the filling. Repeat with the remaining pancakes.
- Slice the rolls in half and serve immediately with extra hoisin sauce on the side.
