Ingredients

  • Duck breast - 300 grams
  • Soy sauce (kosher) - 2 tablespoons
  • Hoisin sauce - 1 tablespoon
  • Rice (jasmine or basmati) - 1 cup
  • Water - 2 cups
  • Cucumber - 1 small, julienned
  • Green onions - 2, chopped
  • Sesame oil - 1 teaspoon
  • Ginger - 1 teaspoon, grated
  • Garlic - 1 clove, minced
  • Sugar - 1 teaspoon
  • Black pepper - to taste
  • Salt - to taste

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Score the skin of the duck breast in a diamond pattern, being careful not to cut into the meat.
  3. Rub the duck breast with soy sauce, hoisin sauce, ginger, garlic, sugar, salt, and pepper. Let it marinate for at least 15 minutes.
  4. In a saucepan, combine the rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes or until the rice is cooked and water is absorbed.
  5. While the rice is cooking, place the marinated duck breast skin-side up on a baking tray and roast in the preheated oven for 25-30 minutes, or until the skin is crispy and the internal temperature reaches 75°C (165°F).
  6. Once the duck is cooked, remove it from the oven and let it rest for 5 minutes before slicing it thinly.
  7. Fluff the cooked rice with a fork and drizzle sesame oil over it. Mix in chopped green onions.
  8. To serve, place a portion of rice on each plate, top with slices of duck breast, and garnish with julienned cucumber. Drizzle with additional hoisin sauce if desired.
