- Duck breast - 300 grams
- Soy sauce (kosher) - 2 tablespoons
- Hoisin sauce - 1 tablespoon
- Rice (jasmine or basmati) - 1 cup
- Water - 2 cups
- Cucumber - 1 small, julienned
- Green onions - 2, chopped
- Sesame oil - 1 teaspoon
- Ginger - 1 teaspoon, grated
- Garlic - 1 clove, minced
- Sugar - 1 teaspoon
- Black pepper - to taste
- Salt - to taste
Steps
- Preheat your oven to 200°C (400°F).
- Score the skin of the duck breast in a diamond pattern, being careful not to cut into the meat.
- Rub the duck breast with soy sauce, hoisin sauce, ginger, garlic, sugar, salt, and pepper. Let it marinate for at least 15 minutes.
- In a saucepan, combine the rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes or until the rice is cooked and water is absorbed.
- While the rice is cooking, place the marinated duck breast skin-side up on a baking tray and roast in the preheated oven for 25-30 minutes, or until the skin is crispy and the internal temperature reaches 75°C (165°F).
- Once the duck is cooked, remove it from the oven and let it rest for 5 minutes before slicing it thinly.
- Fluff the cooked rice with a fork and drizzle sesame oil over it. Mix in chopped green onions.
- To serve, place a portion of rice on each plate, top with slices of duck breast, and garnish with julienned cucumber. Drizzle with additional hoisin sauce if desired.
