Ingredients
- Duck breast - 300 grams
- Hoisin sauce - 3 tablespoons
- Soy sauce - 1 tablespoon
- Rice vinegar - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Cucumber - 1 small, julienned
- Carrot - 1 small, julienned
- Red bell pepper - 1/2, julienned
- Green onions - 2, chopped
- Lettuce leaves (iceberg or butter) - 8
- Sesame oil - 1 teaspoon
- Black sesame seeds - 1 teaspoon (for garnish)
Steps
- Preheat the oven to 200°C (400°F).
- Score the skin of the duck breast in a crisscross pattern, being careful not to cut into the meat.
- Season the duck breast with salt and pepper on both sides.
- Place the duck breast skin-side down in a cold, non-stick skillet over medium heat. Cook for about 6-8 minutes until the skin is crispy and golden.
- Flip the duck breast and cook for an additional 3-4 minutes. Transfer the skillet to the oven and roast for 10-12 minutes for medium-rare doneness.
- While the duck is cooking, prepare the sauce by mixing hoisin sauce, soy sauce, rice vinegar, minced garlic, and grated ginger in a bowl.
- Remove the duck from the oven and let it rest for 5 minutes before slicing it thinly.
- Toss the cucumber, carrot, red bell pepper, and green onions in a bowl with sesame oil.
- To assemble, take a lettuce leaf and fill it with sliced duck, followed by the vegetable mixture. Drizzle with extra hoisin sauce if desired.
- Sprinkle with black sesame seeds for garnish and serve immediately.
