Ingredients
- Duck breast - 200 grams
- Hoisin sauce - 2 tablespoons
- Rice paper wrappers - 4 sheets
- Cucumber - 50 grams, julienned
- Carrot - 50 grams, julienned
- Spring onion - 1, sliced thinly
- Fresh cilantro - 10 grams, chopped
- Sesame oil - 1 teaspoon
- Salt - to taste
- Pepper - to taste
Steps
- Preheat the oven to 180°C (350°F).
- Score the skin of the duck breast in a crisscross pattern, being careful not to cut into the meat.
- Season both sides of the duck breast with salt and pepper.
- Place the duck breast skin-side down in a cold, dry skillet and turn the heat to medium. Cook for about 6-8 minutes, allowing the fat to render and the skin to become crispy.
- Flip the duck breast and cook for an additional 4-5 minutes until the meat is cooked to medium rare (internal temperature of 65°C or 150°F).
- Remove the duck from the skillet and let it rest for 5 minutes before slicing thinly.
- In a bowl, mix hoisin sauce with sesame oil and set aside.
- Prepare a shallow dish with warm water. Dip one rice paper wrapper in the water for about 10 seconds until soft.
- Lay the softened rice paper on a clean surface. Place a few slices of duck, some cucumber, carrot, spring onion, and cilantro in the center.
- Drizzle a small amount of the hoisin sauce mixture over the filling.
- Fold the sides of the rice paper over the filling, then roll it up tightly from the bottom to the top.
- Repeat the process with the remaining rice paper wrappers and filling.
- Serve the Peking Duck Bites with extra hoisin sauce for dipping.
