Ingredients

  • Duck breast - 200 grams
  • Hoisin sauce - 2 tablespoons
  • Rice paper wrappers - 4 sheets
  • Cucumber - 50 grams, julienned
  • Carrot - 50 grams, julienned
  • Spring onion - 1, sliced thinly
  • Fresh cilantro - 10 grams, chopped
  • Sesame oil - 1 teaspoon
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Score the skin of the duck breast in a crisscross pattern, being careful not to cut into the meat.
  3. Season both sides of the duck breast with salt and pepper.
  4. Place the duck breast skin-side down in a cold, dry skillet and turn the heat to medium. Cook for about 6-8 minutes, allowing the fat to render and the skin to become crispy.
  5. Flip the duck breast and cook for an additional 4-5 minutes until the meat is cooked to medium rare (internal temperature of 65°C or 150°F).
  6. Remove the duck from the skillet and let it rest for 5 minutes before slicing thinly.
  7. In a bowl, mix hoisin sauce with sesame oil and set aside.
  8. Prepare a shallow dish with warm water. Dip one rice paper wrapper in the water for about 10 seconds until soft.
  9. Lay the softened rice paper on a clean surface. Place a few slices of duck, some cucumber, carrot, spring onion, and cilantro in the center.
  10. Drizzle a small amount of the hoisin sauce mixture over the filling.
  11. Fold the sides of the rice paper over the filling, then roll it up tightly from the bottom to the top.
  12. Repeat the process with the remaining rice paper wrappers and filling.
  13. Serve the Peking Duck Bites with extra hoisin sauce for dipping.
