Ingredients

  • Firm tofu - 200g
  • Soy sauce - 2 tablespoons
  • Peanut butter - 2 tablespoons
  • Maple syrup - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Sesame oil - 1 tablespoon
  • Whole wheat slider buns - 2
  • Cucumber - 1/2, thinly sliced
  • Carrot - 1 small, shredded
  • Red cabbage - 1/2 cup, thinly sliced
  • Fresh cilantro - a handful, chopped
  • Lime juice - 1 tablespoon

Steps

  1. Press the tofu to remove excess moisture, then cut it into 1 cm thick slices.
  2. In a bowl, mix soy sauce, peanut butter, maple syrup, minced garlic, grated ginger, and sesame oil to create a marinade.
  3. Marinate the tofu slices in the mixture for at least 15 minutes.
  4. Preheat a non-stick skillet over medium heat. Cook the marinated tofu slices for about 4-5 minutes on each side until golden and crispy.
  5. While the tofu is cooking, prepare the slider toppings by slicing the cucumber, shredding the carrot, and thinly slicing the red cabbage.
  6. Once the tofu is cooked, assemble the sliders by placing a slice of tofu on each bun and topping it with cucumber, carrot, red cabbage, and fresh cilantro.
  7. Drizzle lime juice over the toppings, close the buns, and serve immediately.
