- Sesame oil - 1 tablespoon
- Whole wheat buns - 2
- Cucumber - 1/2, sliced
- Carrot - 1, grated
- Fresh cilantro - a handful, chopped
- Sriracha sauce - to taste
Steps
- Press the tofu for 15 minutes to remove excess moisture, then crumble it into a bowl.
- Add peanut butter, soy sauce, minced garlic, grated ginger, and cornstarch to the crumbled tofu, mixing well until combined.
- Heat sesame oil in a non-stick skillet over medium heat.
- Form the tofu mixture into two patties and cook in the skillet for 5-6 minutes on each side until golden brown.
- While the patties are cooking, prepare the vegetables: slice the cucumber, grate the carrot, and chop the cilantro.
- Toast the whole wheat buns lightly on a pan or in a toaster.
- Assemble the burgers by placing the tofu patty on the bottom half of each bun, top with cucumber, carrot, cilantro, and a drizzle of Sriracha sauce.
- Cover with the top half of the bun and serve immediately.
