Ingredients

  • Firm tofu - 200 grams
  • Peanut butter - 3 tablespoons
  • Soy sauce - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Cornstarch - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Whole wheat buns - 2
  • Cucumber - 1/2, sliced
  • Carrot - 1, grated
  • Fresh cilantro - a handful, chopped
  • Sriracha sauce - to taste

Steps

  1. Press the tofu for 15 minutes to remove excess moisture, then crumble it into a bowl.
  2. Add peanut butter, soy sauce, minced garlic, grated ginger, and cornstarch to the crumbled tofu, mixing well until combined.
  3. Heat sesame oil in a non-stick skillet over medium heat.
  4. Form the tofu mixture into two patties and cook in the skillet for 5-6 minutes on each side until golden brown.
  5. While the patties are cooking, prepare the vegetables: slice the cucumber, grate the carrot, and chop the cilantro.
  6. Toast the whole wheat buns lightly on a pan or in a toaster.
  7. Assemble the burgers by placing the tofu patty on the bottom half of each bun, top with cucumber, carrot, cilantro, and a drizzle of Sriracha sauce.
  8. Cover with the top half of the bun and serve immediately.
