Ingredients
- Roasted peanuts - 100 grams
- Water - 500 ml
- Coconut milk - 200 ml
- Rock sugar - 30 grams
- Salt - a pinch
- Vanilla extract - 1 teaspoon
Steps
- Place the roasted peanuts in a blender and add 250 ml of water. Blend until smooth and creamy.
- Strain the peanut mixture through a fine sieve or cheesecloth into a pot, discarding the solid remnants.
- Add the remaining 250 ml of water, coconut milk, rock sugar, and a pinch of salt to the pot. Stir well to combine.
- Heat the mixture over medium heat, stirring frequently until the rock sugar is dissolved and the soup is heated through, about 10 minutes.
- Once heated, stir in the vanilla extract and remove from heat.
- Serve warm in bowls, optionally garnished with crushed peanuts or a drizzle of coconut milk.
