Ingredients

  • Roasted peanuts - 100 grams
  • Water - 500 ml
  • Coconut milk - 200 ml
  • Rock sugar - 30 grams
  • Salt - a pinch
  • Vanilla extract - 1 teaspoon

Steps

  1. Place the roasted peanuts in a blender and add 250 ml of water. Blend until smooth and creamy.
  2. Strain the peanut mixture through a fine sieve or cheesecloth into a pot, discarding the solid remnants.
  3. Add the remaining 250 ml of water, coconut milk, rock sugar, and a pinch of salt to the pot. Stir well to combine.
  4. Heat the mixture over medium heat, stirring frequently until the rock sugar is dissolved and the soup is heated through, about 10 minutes.
  5. Once heated, stir in the vanilla extract and remove from heat.
  6. Serve warm in bowls, optionally garnished with crushed peanuts or a drizzle of coconut milk.
