  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Red pepper flakes - 1/2 teaspoon (optional)
  • Green onions - 2, chopped
  • Cilantro - a handful, chopped
  • Vegetable oil - 1 tablespoon
  • Mixed vegetables (bell peppers, carrots, broccoli) - 200 grams

Steps

  1. Cook the rice noodles according to package instructions, then drain and set aside.
  2. In a bowl, whisk together peanut butter, soy sauce, sesame oil, rice vinegar, brown sugar, minced garlic, grated ginger, and red pepper flakes until smooth to create the satay sauce.
  3. Heat vegetable oil in a large skillet over medium heat, add the mixed vegetables, and stir-fry for about 5 minutes until tender.
  4. Add the cooked rice noodles to the skillet with the vegetables and pour the satay sauce over the top.
  5. Toss everything together until the noodles and vegetables are well coated in the sauce, cooking for an additional 2-3 minutes.
