Ingredients

  • Jasmine rice - 150 grams
  • Water - 300 ml
  • Peanuts (unsalted, roasted) - 50 grams
  • Carrot (finely diced) - 50 grams
  • Green bell pepper (finely diced) - 50 grams
  • Spring onions (sliced) - 2 stalks
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Garlic (minced) - 2 cloves
  • Ginger (grated) - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Cilantro (for garnish) - a handful

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then combine it with 300 ml of water in a pot.
  2. Bring the rice to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes or until the rice is cooked and the water is absorbed.
  3. While the rice is cooking, heat sesame oil in a large frying pan or wok over medium heat.
  4. Add minced garlic and grated ginger to the pan and sauté for about 1 minute until fragrant.
  5. Stir in the diced carrots and green bell pepper, cooking for an additional 3-4 minutes until the vegetables are tender.
  6. Add the cooked rice to the pan, followed by soy sauce, and mix everything well to combine.
  7. Add the roasted peanuts and sliced spring onions, season with salt and black pepper to taste, and stir-fry for another 2-3 minutes.
  8. Serve hot, garnished with fresh cilantro.
