- Jasmine rice - 150 grams
- Water - 300 ml
- Peanuts (unsalted, roasted) - 50 grams
- Carrot (finely diced) - 50 grams
- Green bell pepper (finely diced) - 50 grams
- Spring onions (sliced) - 2 stalks
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Garlic (minced) - 2 cloves
- Ginger (grated) - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Cilantro (for garnish) - a handful
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then combine it with 300 ml of water in a pot.
- Bring the rice to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes or until the rice is cooked and the water is absorbed.
- While the rice is cooking, heat sesame oil in a large frying pan or wok over medium heat.
- Add minced garlic and grated ginger to the pan and sauté for about 1 minute until fragrant.
- Stir in the diced carrots and green bell pepper, cooking for an additional 3-4 minutes until the vegetables are tender.
- Add the cooked rice to the pan, followed by soy sauce, and mix everything well to combine.
- Add the roasted peanuts and sliced spring onions, season with salt and black pepper to taste, and stir-fry for another 2-3 minutes.
- Serve hot, garnished with fresh cilantro.
