Ingredients

  • 200g cooked chicken breast - shredded
  • 50g mixed salad greens
  • 50g red bell pepper - thinly sliced
  • 50g cucumber - thinly sliced
  • 30g carrots - julienned
  • 30g red cabbage - shredded
  • 30g roasted peanuts - roughly chopped
  • 2 tbsp peanut butter
  • 1 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 tsp honey
  • 1 garlic clove - minced
  • 1 tsp fresh ginger - grated
  • 1 tbsp sesame seeds for garnish

Steps

  1. In a bowl, combine the peanut butter, soy sauce, rice vinegar, sesame oil, honey, minced garlic, and grated ginger to create the dressing. Mix well until smooth.
  2. In a large mixing bowl, add the shredded chicken, salad greens, red bell pepper, cucumber, carrots, and red cabbage.
  3. Pour the dressing over the salad mixture and toss gently to coat all ingredients evenly.
  4. Divide the salad into two serving bowls and top with chopped roasted peanuts and sesame seeds for garnish.
