- Baking soda - 1/4 teaspoon
- Water - 30 ml
- Peanut butter - 80 grams
- Powdered sugar - 30 grams
- Roasted peanuts (chopped) - 20 grams
- Salt - a pinch
Steps
- In a mixing bowl, combine the all-purpose flour, baking soda, and a pinch of salt.
- In another bowl, mix golden syrup, peanut oil, and water until well blended.
- Gradually add the liquid mixture to the dry ingredients, stirring until a dough forms.
- Knead the dough on a floured surface for about 5 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.
- While the dough is resting, prepare the filling by mixing peanut butter, powdered sugar, and chopped roasted peanuts in a bowl until smooth.
- Divide the dough into 4 equal portions and roll each portion into a ball.
- Flatten each ball into a disc, place a tablespoon of the peanut butter filling in the center, and fold the edges over to seal.
- Press the filled dough ball into a mooncake mold to shape it, then carefully remove.
- Preheat the oven to 180°C (350°F) and line a baking tray with parchment paper.
- Place the shaped mooncakes on the tray and bake for 20-25 minutes, or until golden brown.
- Let them cool before serving.
