Ingredients

  • Fresh pea shoots - 200 grams
  • Vegetable broth - 500 ml
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Onion - 1 small, diced
  • Olive oil - 1 tablespoon
  • Soy sauce - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Sesame oil - 1 teaspoon (optional)
  • Chili oil - for drizzling (optional)

Steps

  1. Heat the olive oil in a medium pot over medium heat.
  2. Add the diced onion and sauté for about 3-4 minutes until translucent.
  3. Stir in the minced garlic and grated ginger, cooking for another minute until fragrant.
  4. Pour in the vegetable broth and bring to a boil.
  5. Add the fresh pea shoots to the pot and simmer for 5-7 minutes until wilted and tender.
  6. Remove from heat and blend the soup using an immersion blender until smooth, or transfer to a blender in batches if necessary.
  7. Return the blended soup to the pot and stir in the soy sauce, adjusting salt and black pepper to taste.
  8. If using, drizzle in the sesame oil for added flavor.
  9. Serve hot, garnished with a drizzle of chili oil if desired.
