- Fresh pea shoots - 200 grams
- Vegetable broth - 500 ml
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Onion - 1 small, diced
- Olive oil - 1 tablespoon
- Soy sauce - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Sesame oil - 1 teaspoon (optional)
- Chili oil - for drizzling (optional)
Steps
- Heat the olive oil in a medium pot over medium heat.
- Add the diced onion and sauté for about 3-4 minutes until translucent.
- Stir in the minced garlic and grated ginger, cooking for another minute until fragrant.
- Pour in the vegetable broth and bring to a boil.
- Add the fresh pea shoots to the pot and simmer for 5-7 minutes until wilted and tender.
- Remove from heat and blend the soup using an immersion blender until smooth, or transfer to a blender in batches if necessary.
- Return the blended soup to the pot and stir in the soy sauce, adjusting salt and black pepper to taste.
