Ingredients

  • Almond flour - 1 cup
  • Eggs - 2 large
  • Water - 1/2 cup
  • Carrot - 1 medium, grated
  • Zucchini - 1 small, grated
  • Green onions - 2, finely chopped
  • Garlic - 1 clove, minced
  • Ginger - 1 teaspoon, grated
  • Coconut aminos - 2 tablespoons
  • Black sesame seeds - 1 tablespoon
  • Olive oil - 2 tablespoons
  • Salt - to taste
  • Pepper - to taste

Steps

  1. In a mixing bowl, combine almond flour, eggs, and water to create a smooth batter. Season with salt and pepper.
  2. Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat.
  3. Pour half of the batter into the skillet, swirling to cover the bottom evenly. Cook for about 2-3 minutes until the edges start to lift.
  4. While the batter is cooking, sprinkle half of the grated carrot, zucchini, green onions, minced garlic, and ginger over the top.
  5. Drizzle 1 tablespoon of coconut aminos and sprinkle half of the black sesame seeds over the vegetables.
  6. Carefully fold the Jianbing in half and cook for another 2 minutes until golden brown. Remove from the skillet and keep warm.
  7. Repeat the process with the remaining batter and vegetables to make the second Jianbing.
  8. Serve warm with additional coconut aminos for dipping.
