Ingredients
- Almond flour - 200g
- Tapioca starch - 50g
- Egg - 1 large
- Water - 100ml
- Sea salt - 1/2 tsp
- Olive oil - 1 tbsp
- Cabbage - 100g, finely chopped
- Carrot - 50g, grated
- Bell pepper - 50g, finely chopped
- Green onion - 2 stalks, finely chopped
- Garlic - 2 cloves, minced
- Ginger - 1 tsp, grated
- Coconut aminos - 1 tbsp
- Sesame oil - 1 tsp
Steps
- In a mixing bowl, combine almond flour, tapioca starch, sea salt, and the egg. Gradually add water until a dough forms, then knead it gently until smooth.
- Cover the dough with a damp cloth and let it rest for 10 minutes.
- In a skillet, heat olive oil over medium heat. Add garlic and ginger, sauté for 1 minute until fragrant.
- Add chopped cabbage, grated carrot, and bell pepper to the skillet and stir-fry for about 5-7 minutes until the vegetables are tender. Stir in green onions and coconut aminos, cooking for an additional 2 minutes. Remove from heat and let cool.
- Divide the rested dough into 8 equal pieces and roll each piece into a thin circle on a piece of parchment paper.
- Place a spoonful of the vegetable filling in the center of each dough circle. Fold over and pinch the edges to seal, creating a dumpling shape.
- In a large skillet, heat a little olive oil over medium heat. Place the dumplings in the skillet and cook for about 3-4 minutes on each side, until golden brown.
- Add 50ml of water to the skillet and cover it with a lid to steam the dumplings for an additional 5 minutes.
- Remove the lid and let the dumplings cook for another minute to crisp the bottom before serving.
