Ingredients

  • Firm tofu - 400 grams
  • Almond flour - 100 grams
  • Olive oil - 2 tablespoons
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/2 teaspoon
  • Red bell pepper - 1 medium, diced
  • Green onions - 2, chopped
  • Mushrooms - 100 grams, sliced
  • Coconut aminos - 2 tablespoons
  • Sesame oil - 1 teaspoon
  • Fresh cilantro - a handful, chopped
  • Red pepper flakes - to taste

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Press the firm tofu to remove excess moisture, then crumble it into a bowl.
  3. Add almond flour, 1 tablespoon of olive oil, garlic powder, onion powder, salt, and black pepper to the crumbled tofu. Mix until combined.
  4. Transfer the mixture to a parchment-lined baking sheet and shape it into a round crust, about 1/2 inch thick.
  5. Bake the crust in the preheated oven for 20 minutes, or until golden and firm.
  6. While the crust is baking, heat the remaining olive oil in a pan over medium heat. Add the diced red bell pepper, sliced mushrooms, and chopped green onions. Sauté until the vegetables are tender, about 5-7 minutes.
  7. Remove the sautéed vegetables from heat and stir in coconut aminos and sesame oil.
  8. Once the crust is done baking, take it out of the oven and evenly distribute the sautéed vegetables on top.
  9. Return the pizza to the oven and bake for an additional 10 minutes.
  10. Garnish with fresh cilantro and red pepper flakes before serving.
