- Firm tofu - 300 grams
- Red bell pepper - 1 (about 150 grams)
- Zucchini - 1 medium (about 200 grams)
- Green onion - 2 stalks
- Coconut aminos - 3 tablespoons
- Sesame oil - 1 tablespoon
- Garlic powder - 1 teaspoon
- Ginger powder - 1 teaspoon
- Cayenne pepper - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Wooden skewers - 4 (soaked in water for 30 minutes)
Steps
- Press the tofu for 15 minutes to remove excess moisture, then cut it into 2 cm cubes.
- In a mixing bowl, combine coconut aminos, sesame oil, garlic powder, ginger powder, cayenne pepper, salt, and black pepper to create the marinade.
- Add the tofu cubes to the marinade and let them soak for at least 10 minutes.
- While the tofu is marinating, chop the red bell pepper and zucchini into bite-sized pieces and slice the green onions into 2 cm lengths.
- Preheat the grill or grill pan over medium heat.
- Thread the marinated tofu, red bell pepper, zucchini, and green onions alternately onto the soaked wooden skewers.
- Place the skewers on the grill and cook for 10-12 minutes, turning occasionally, until the tofu is heated through and has grill marks.
- Remove the skewers from the grill and let them cool slightly before serving.
