Ingredients

  • Firm tofu - 300 grams
  • Red bell pepper - 1 (about 150 grams)
  • Zucchini - 1 medium (about 200 grams)
  • Green onion - 2 stalks
  • Coconut aminos - 3 tablespoons
  • Sesame oil - 1 tablespoon
  • Garlic powder - 1 teaspoon
  • Ginger powder - 1 teaspoon
  • Cayenne pepper - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Wooden skewers - 4 (soaked in water for 30 minutes)

Steps

  1. Press the tofu for 15 minutes to remove excess moisture, then cut it into 2 cm cubes.
  2. In a mixing bowl, combine coconut aminos, sesame oil, garlic powder, ginger powder, cayenne pepper, salt, and black pepper to create the marinade.
  3. Add the tofu cubes to the marinade and let them soak for at least 10 minutes.
  4. While the tofu is marinating, chop the red bell pepper and zucchini into bite-sized pieces and slice the green onions into 2 cm lengths.
  5. Preheat the grill or grill pan over medium heat.
  6. Thread the marinated tofu, red bell pepper, zucchini, and green onions alternately onto the soaked wooden skewers.
  7. Place the skewers on the grill and cook for 10-12 minutes, turning occasionally, until the tofu is heated through and has grill marks.
  8. Remove the skewers from the grill and let them cool slightly before serving.
