Ingredients

  • Cauliflower - 300 grams
  • Firm tofu - 200 grams

  • Garlic powder - 1 teaspoon
  • Red chili flakes - 1 teaspoon
  • Coconut aminos - 2 tablespoons
  • Tomato sauce (no sugar added) - 100 grams
  • Green onion - 2 stalks, chopped
  • Bell pepper - 1 small, diced
  • Zucchini - 1 small, sliced
  • Fresh basil - 5 leaves, torn
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat your oven to 220°C (425°F).
  2. Begin by making the cauliflower crust: steam the cauliflower florets for 5-7 minutes until tender, then let them cool.
  3. Once cooled, pulse the steamed cauliflower in a food processor until it resembles rice.
  4. Transfer the cauliflower rice to a clean kitchen towel and squeeze out excess moisture.
  5. In a bowl, mix the cauliflower rice with 1 tablespoon of olive oil, garlic powder, salt, and black pepper.
  6. Spread the cauliflower mixture onto a parchment-lined baking sheet, shaping it into a pizza crust about 1 cm thick.
  7. Bake the crust in the preheated oven for 15-20 minutes until golden and firm.
  8. While the crust is baking, press the tofu to remove excess moisture and cut it into cubes.
  9. In a skillet, heat the remaining 1 tablespoon of olive oil over medium heat and add the tofu cubes.
  10. Sprinkle red chili flakes, salt, and black pepper on the tofu, and cook for about 10 minutes until crispy and golden, stirring occasionally.
  11. Once the crust is done, remove it from the oven and spread the tomato sauce evenly over the top.
  12. Layer the cooked tofu, bell pepper, zucchini, and green onion over the sauce.
  13. Return the pizza to the oven and bake for an additional 10 minutes.
  14. Remove the pizza from the oven, garnish with fresh basil, slice, and serve hot.
