Ingredients

  • Cauliflower - 300g
  • Ground lamb - 200g
  • Egg - 1 large
  • Almond flour - 50g
  • Garlic powder - 1 tsp
  • Onion powder - 1 tsp
  • Chili flakes - 1 tsp
  • Coconut aminos - 2 tbsp
  • Fresh cilantro - 2 tbsp, chopped
  • Red bell pepper - 1 medium, diced
  • Green onions - 2 stalks, sliced
  • Olive oil - 1 tbsp
  • Salt - 1/2 tsp
  • Black pepper - 1/2 tsp

Steps

  1. Preheat the oven to 220°C (428°F).
  2. To make the cauliflower crust, steam the cauliflower florets until tender, about 5-7 minutes, then drain and let cool.
  3. Once cooled, pulse the cauliflower in a food processor until it resembles rice, then place in a clean kitchen towel and squeeze out excess moisture.
  4. In a bowl, combine the cauliflower, almond flour, egg, garlic powder, onion powder, salt, and black pepper. Mix until well combined.
  5. Spread the mixture onto a parchment-lined baking sheet to form a round pizza crust about 1 cm thick.
  6. Bake the crust in the preheated oven for 15-20 minutes until golden brown.
  7. While the crust is baking, heat the olive oil in a skillet over medium heat. Add the ground lamb, chili flakes, and coconut aminos. Cook until the lamb is browned and cooked through, about 8-10 minutes.
  8. Once the crust is ready, remove it from the oven and top with the cooked lamb, diced red bell pepper, and sliced green onions.
  9. Return the pizza to the oven and bake for an additional 5-7 minutes to heat the toppings.
  10. Remove from the oven, garnish with chopped cilantro, slice, and serve hot.
