Ingredients
- Cauliflower - 300g
- Ground lamb - 200g
- Egg - 1 large
- Almond flour - 50g
- Garlic powder - 1 tsp
- Onion powder - 1 tsp
- Chili flakes - 1 tsp
- Coconut aminos - 2 tbsp
- Fresh cilantro - 2 tbsp, chopped
- Red bell pepper - 1 medium, diced
- Green onions - 2 stalks, sliced
- Olive oil - 1 tbsp
- Salt - 1/2 tsp
- Black pepper - 1/2 tsp
Steps
- Preheat the oven to 220°C (428°F).
- To make the cauliflower crust, steam the cauliflower florets until tender, about 5-7 minutes, then drain and let cool.
- Once cooled, pulse the cauliflower in a food processor until it resembles rice, then place in a clean kitchen towel and squeeze out excess moisture.
- In a bowl, combine the cauliflower, almond flour, egg, garlic powder, onion powder, salt, and black pepper. Mix until well combined.
- Spread the mixture onto a parchment-lined baking sheet to form a round pizza crust about 1 cm thick.
- Bake the crust in the preheated oven for 15-20 minutes until golden brown.
- While the crust is baking, heat the olive oil in a skillet over medium heat. Add the ground lamb, chili flakes, and coconut aminos. Cook until the lamb is browned and cooked through, about 8-10 minutes.
- Once the crust is ready, remove it from the oven and top with the cooked lamb, diced red bell pepper, and sliced green onions.
- Return the pizza to the oven and bake for an additional 5-7 minutes to heat the toppings.
- Remove from the oven, garnish with chopped cilantro, slice, and serve hot.
